Herbed rack of lamb

Though it looks like you've been cooking all day, this lamb recipe is surprisingly simple to prepare.  This is one of my favorite marinades for lamb.

List of ingredients

1 rack of lamb (size depends on how many diners you will be having)
1/4 cup olive oil
2 cloves garlic minced
2 tbsp fresh rosemary chopped
1 tsp herbs de provence
1/2 tsp granulated onion
juice of 1/2 lemon
1 1/2 tbsp prepared mustard
generous amount of salt and pepper

Combine all of the marinade ingredients (except for salt and pepper) in a shallow baking dish.  Salt and pepper the lamb extremely well.  Place the rack of lamb in the dish and coat it completely with the mixture.  Cover loosely with plastic wrap and refrigerate for about an hour.  

Preheat oven to 450 degrees and roast lamb for about 30 minutes, or until the internal temperature reaches 145.  Allow lamb to rest for ten minutes before slicing individual chops.
