Quick little pizzas


I've been trying (and sometimes failing) to eat a little bit healthier lately.  Tonight I didn't really want to make a big deal out of dinner, so I made really simple little pizzas using what I had around the house.  A coworker of mine told me about these little sandwich flats which made really great low calorie crusts.  I topped them with delicious heirloom tomatoes, basil, and fresh mozzarella to create a light satisfying meal.


Quick list of ingredients:

1 whole wheat Sandwich Flat or "Thin" or whatever the company calls it's own variation.  Like this:


1 tablespoon tomato paste
dash garlic powder
1 tsp water
1 tsp olive oil
1-2 small sliced heirloom tomatoes with most of the seeds removed
6 small slices fresh mozzarella
1 tsp grated parmesan
2 large leaves fresh basil
dash chili flakes

Preheat the oven to 375

Mix the first three ingredients to form a very quick tomato sauce.  You can add italian seasoning if you like, but I wasn't in the mood.

Drizzle the sandwich slices with olive oil and bake them on a sheet pan for a few minutes.  Lightly slather the sandwich flats with the sauce, top with tomatoes, mozzarella and basil.  Sprinkle the parmesan and chili flakes on top and bake for about 10-15 minutes.  That was fast wasn't it?
