Crunchy corn salad

Since my meal was so heavy last night, and I ate leftovers for lunch, I decided to lighten it up tonight.  This chilled salad incorporates lovely summer produce and a light dressing for a really fresh dish.   



Quick list of ingredients:


3 ears of sweet corn
1 small cucumber
4 small tomatoes (or one large one, or some grape tomatoes.  However you want to do it because it's just a salad)
1 small sweet onion such as a vidalia
1/2 of a red pepper
1/2 of a green pepper
1/4 cup green peas
1/4 cup prepared italian dressing mix



It's really just a salad.  A no-brainer.  Just slice the corn off the ears like so....


Then dice the rest of the vegetables into nice little bite-sized pieces.  Here is some pretty produce:





Toss the salad with prepared dressing and refrigerate for a half an hour.  Toss one more time before serving and enjoy!
