Pig-in-a-poke.

Egg-in-a-hole, Pirate's Eye, Eggy Bread, or whatever you want to call it you can.  When I was growing up, one of the few things my dad could cook was a "Pig-in-the-poke."  I don't know what a "poke" is, or why there is a pig in it, or why it's even called a pig because it's an egg and bread.  I wont try to understand the logistics of the dish, I just know that this is still one of my favorite things to eat for breakfast on a lazy weekend morning.



Quick list of ingredients:

1 Slice of whatever bread you have lying around
1 Egg
Butter for frying
Salt and pepper



Start with your bread:

You can use whatever you have in the house, though I wouldn't recommend a cinnamon raisin bread.  Here we have the standard whole wheat slice.  You can cut out your hole using whatever method you see fit.  I happen to like the shot glass technique as it is the perfect circumference.  Also, if you're recovering from a night of drinking, I'm assuming you have a shot glass handy as well.  Wash it out first, cut out the hole and feed the unused bread hole to the birds.


Melt a tablespoon of good salted butter in a hot skillet. 

Next, put your bread in the pan and get it nice and buttery.  Toast that one side until it is slightly browned, then flip it.  If you don't do this, the bread gets very soggy when you crack the egg into it.  Now...

Crack your egg into the hole on the slightly toasted side of the bread.  Sprinkle with salt and pepper. Allow it to cook for a bit before flipping so you don't make a mess, and you can get the full effect of the "Pig-in-the-poke."

Carefully flip 'er over.  Continue cooking to your desired egg consistency.  I recommend leaving it a bit runny so you have something to sop up with all of that bread!


I ate it in bed while watching a good show on hulu.
