Fish taco time!

Tonight was taco night.  I decided to make a light meal because it's about 80 degrees and the thought of beef tacos was sort of making me nauseous.  


Quick list of ingredients:


1 lb tilapia or any white fish you like. 
2 cloves garlic pressed
1 big handful fresh cilantro (about a cup) FINELY chopped, or food-processed
Salt and pepper to taste
Cayenne pepper to your liking (or not if you can't take the heat)
2 tbsp olive oil + some for frying
Zest of a small lime + the juice of half
1 package tortillas
1 can chipotle salsa or adobo salsa
Mayonnaise 
Shredded red cabbage (as much as you'll need for topping your tacos)



For the fish:




Put the first 7 ingredients in a bowl, coat the fish, cover it up and forget about it for 15 minutes. 

While the fish is marinating:


Get your corn tortillas out of the fridge.  I better not catch you using those weird wrap sandwich "tortillas", because we use the real corn stuff around here.  But I digress....

Heat up a dry pan.  No oil necessary.  Meanwhile, set the oven to "warm."  When your pan is nice and hot, brown each side of the tortilla.  Each should take about a minute and a half or so.  They will turn golden, soft, and start to bubble.  When each one is done, store them in the oven until you are ready to use them.

IMPORTANT!!  Put a damp cloth over the tortillas while they are in the oven so they don't dry out.  Didn't mean to yell, I just wanted to make this clear.

Now, the mexican fancy sauce:


1 part chipotle (notice the spelling on the can) salsa
2 parts mayonnaise

Stir!


When you recover from the difficulty of preparing mexican fancy sauce, shred up some red cabbage and set it aside.



Yo, I think the fish is done marinating!


Lightly oil a skillet with olive oil, and fry your fish.  Depending on the thickness, they should take about 2-3 minutes per side.  When they are done, cut them into large "rustic" strips, as they say on Food Network.

Finally, you can assemble.  Take one tortilla, smear a bit of fancy sauce on it, followed by two strips of fish.  Top the fish with some cabbage, and a little more of the sauce.  Squeeze a little lime on that taco and put it in your mouth!
